The vines that give birth to this wine are Chardonnay with older than twenty. This vineyard is located on our farm Plant, located in Quintanilla Onesimus (Valladolid), in the heart of Castilla.
They are cultivated in a traditional way and have a very special feature, the soils are clay-limestone bedrock with no fragmentation, less than 1 m from the surface at an altitude of 911 m.
Hand harvested at optimum ripeness in boxes of 15 kg bunches pass through a sorting table and then are pressed very lightly and slowly, keeping the fresh grapes. Natural settling overnight and barreling directly to new French oak barrels with a stay of 6 months.
Alcoholic fermentation takes place in this new light oak batonage the end of fermentation. Single racking to try to maintain the elegance of the wine.
VISUAL: Clean and bright, straw yellow with shades of old gold and steely.
NOSE: Intense and complex aromas. Notes of tropical fruits combined with light flavorings of butter, toasted bread and nuts.
MOUTH: After a cool, sharp attack leaves greasy feeling with many floral notes, leading to a smoky and fruity aromatic memories.

The best matching will be with tasty seafood, big shellfish, white or fatty fish, such as salmon and also poultry. This wine is ideal to be served with white meats and pressed cheeses.
Recommended serving temperature: 10-12ºC.
