Grapes from ancient vineyards, grown in clay-calcareous soils traditionally.
This set of characteristics are very low in yields per hectare.
Careful selection of grapes held in manual harvesting and subsequent barreling without the use of mechanical elements.
Alcoholic fermentation in wooden vats and malolactic fermentation in new French oak barrels. Aging 24 months in oak.
VISUAL: High intensity, cardinal red with intense purple hues.
NOSE: Where broad and intense aromas of black fruit compote, mint, cocoa and a light background of roasted and caramel tones.
Very fine and complex aromas that evolve throughout the tasting.
MOUTH: The first sensations are fresh and friendly, giving way to characterize greasiness and meaty wine. To end with a long aftertaste where we again recall the spicy aromas and caramel.

To complement the elegance of this wine we recommend its accompaniment with grilled red meat or salsa, hunting fur and feather soft cheeses or cured and little blue fish.
For a marriage of contrasts try to leave a little to go and enjoy it with a dessert of black chocolate. If uncorked at time of consumption should carefully decanting or serving previously in the cup and let the wine is oxygenated.
We recommend to serve at a temperature of 16º - 18ºC.
