Hand-harvested and meticulously selected clusters at their aromatic maturity were brought to the winery in 15 kilograms crates. Once by the vat they were newly selected and the clusters were barreled whole and lightly treaded every day before the start of the alcoholic fermentation. The treading was complemented by the necessary “bâtonnages” throughout the natural alcoholic fermentation.
The devatting took place 18 days after. The wine was poured in 14 new French oak barrels from different forests, to obtain its characteristic aromatic complexity. The barrel ageing took place from mid October 2010 until June 2012 when the wine was bottled.
